As a kid when I would wake up to the sound of the kitchen aid whirring, I knew that something wonderful was being prepped, and more often than not, it was waffles! My mom has been making waffles the same way for years + though I have tried other recipes, nothing else compares for me.

This recipe has simple ingredients so I always have them on hand, which means that this is a go-to breakfast for family saturdays or when we have company.

How many waffles it makes definitely depends on your waffle maker, but we do a single recipe for our family (2 adults + toddler) and have 1-2 leftover, and then i always double it for company!

• 1 1/2 cup flour
• 3 tsp baking powder
• 1/2 tbsp sugar
• 3 eggs (separated, see below)
• 1 2/3 cup milk
• 1/4 margarine (or butter), melted

1. Prepare three bowls for mixing.
2. In the first bowl, combine all of the dry ingredients
3. In the second bowl, add the milk and margarine.
4. Separate the eggs: add the yolks to the milk–margarine mixture, and place the whites into the third bowl.
5. Using a hand mixer or stand mixer, beat the egg whites until stiff peaks form.
6. Combine the wet mixture (milk, margarine, and yolks) with the dry ingredients, stirring just until blended.
7. Gently fold the beaten egg whites into the batter, being careful not to deflate them.
8. Enjoy with syrup, berries + whip cream!
